Bench Update leads to frappe.exceptions.LinkValidationError: Could not find Document: Tax Category

You can try a few things

  1. bench update
  2. bench clear-cache
  3. bench reload-doctype “Tax Category”
  4. Comment out the particular patch that won’t run/update
