$5 or $10 price plan?

I am wondering if I should use the $5 or $10 price plan.

Can I change if I want to go to a different priced plan before the year is up?
What does “1 custom form” mean? I have been learning ERPNext by testing it on the free plan and I have made changes to various docutypes and fields. Can I continue do this or is it limited to just one in the paid plans?

Can I continue with the company I set up in the free plan or do I have to start over fresh?
