I am currently evaluating ERPNext for a service oriented company.
I have read in the documentation that services can be managed with tasks which I agree. But I wonder how it is possible to add materials/consumptions to one task.
I.e if one task of my project of development of a new product prototype is to build the hull, how can I assign to this task all the resin, fibres and materials that have been used on this particular task?!

You can create a new BOM for your item and create a custom field in Task to attach the BOM to the task.

I am really impressed with ERPNext. I was able to implement your modification easily in no time, and I have just been playing with this ERP since yesterday!
Now, to invoice the total task including the selected BOM that includes several materials, what is the best strategy?

Billing will be done either for the manufactured item, or for your services. In the invoice, you can specify Project for which this invoice is made. If needed, you can insert Task field in the Sales Invoice.
For tracking cost for each Project/Task, you should use Cost Center. Check following link to learn more about the Cost Center.
