There is no type (entity) for organization for a contact. So if I want to have an object I have to create a customer?

Your statement sounds correct. If you want to associate a Contact, you’ll need one of the following (Customer, Lead, Opportunity, Supplier, Prospect, Manufacturer, or sales partner) if you want to use what’s available out of the box. If none of those provide a “workaround” you’ll need to create a custom doctype with a link to contact doctype.
