Custom Field Options Removal

Hi, Everyone
Anybody knows how to set a single value (only one by default option) in a field (Write off amount). on ERP.
Basically when I enter an Write off amount it ask me to select a account, and there I can see multiple options of my company, However I’m wondering if that can be set to a single option so that no one can change that or select only one option.
I don’t want to delete accounts just want to set by single option or HIDE it (When I try to hide it ask me to select account even it’s not mandatory)

@rs115199789 open customization for the doctype . select the field as read only , and write the default account . and make sure the account is there and will still there

I have another question i have a doc type name cashbooks, there are 2 workflow state in that, so i want whenever a user submit that cashbook (workflow status change) then a custom notification should be sent only few users which i will select for the doc type.
