One the database gets huge with lots of finished projects with lots of documents (tech drawings pictures xls etc) Is it possible to archive these files at some point?
How much Erp Next can take before starting to be slow / break?

Oops I did not understand your question and went onto speak about something else.
The files you upload are not stored on the database but on the server’s disk. Is it possible to compress those files ?
Since images are involved, is it okay you download zipped images and then extract and view them later on their PCs. Or you can look at using image extensions that offer good quality at smaller size.

I don’t know about how ERPNext handles these files on disk hence can’t comment about it.
However, Database growth can be controlled if you limit the versioning to only very important documents.
