When I want to email a document like a PO, it is not attached by DEFAULT.
Is there a setting for this we can change?

I’m encountering this issue as well. I wasn’t able to find any info regarding this.
If I remember correctly this went away in v11. For v9 and v10, the system would remember which checkmarks were last chosen.
Oddly, whenever I access my instance on my mobile device through my browser, the Attach Document Print is chosen automatically.

I think there should be a configuration for the default, e.g. in the System Settings. In my experience, in most applications this should be on by default, only in rare cases it should be off…

Attach document Print shares my personal details/bio, Frappe UserID in the PDF Doc.
This is not good.

This is risky. Anyone forgets to uncheck this option and a lot of private information is sent by email.
Anyone has an idea how to fix this?
