is there an updated comparison with Dynamics 365? Something maybe created by ERPNext/Frappe?

I know this isn’t the answer you want, but you don’t want this type of advice from anyone except for an implementor who has onboarded clients to both types of ERP.
Set aside $300 usd, and contact an implementor like this one and offer to pay for three hours of describing your situation and consulting. This is the only way.
Any other work other than what you do yourself will result in heartache. These software are so niche and important no amount of articles or skin-deep reviews will help you
