What would you recommend on:

RAM
Storage

RAM - 8 GB
STORAGE - 1 TB SATA 7200 RPM
if u scroll up to the previousely made comments u should be able to guess that such a machine should be more then fine for your scenario.

With this configuration ERPNext would be on steroids as per me.
