You should restrict users permission only to Sales Invoice for POS invoicing. Check following link to learn assigning roles to users and customizing permissions in ERPNext.
Basically I would like to have a user that is just using POS (selling items from a POS).
Any ideas what I'm missing?

Thanks for the advise. I did create a new role "POS user" and gave it various rights such as account, contacts, customers, warehouse, mode of payment, etc. (basically all the fields required to make a Sale Invoice.
I've created a user that only have that role.
Now the POS "icon" / app is not appearing for that user when logged in? What am I missing to ensure that the POS app is there for that user.

I've been to the said page and I see the 3 roles, but I'm not able to edit / add anything on that page although I'm logged in as the sys admin. Shouldn't I be able to add a row with "POS user" as a role? I'm on frappecloud.com.

You will have to give read and write to "System Manager" for "Page" via Role Permissions Manager, before you can edit the page permissions. Sorry. This will be made default.
