In the case of ERPNext being accessible via
http://IP:PORT
how am i going to configure make it SSL certified using the following certificate generated from Certbot??

How can I extract the fullchain.pem and privkey.pem for the ERPNext instance to make it SSL-protected?

Assigning SSL certificates directly to IP address is possible but rarely used. Instead, use a domain name and point it to the server IP address where ERPNext is installed and then assign the SSL certificate to the domain using certbot.
