I have seen in a lot of forms like communication, customer issue and numerous other forms that there are 2 fields
1. User Field: Which is basically from the Profile Doctype
2. Sales Person Field: Which is from the Sales Person Doctype.
Is there a way to link the 2 fields together, or there are scenarios when the 2 fields are needed to be separate.

Good suggestions - the Sales Person field is indeed a bad design and should ideally be user. (The root of the bad design is that initially we did not have an unlimited user plan and some customers did not want to give a login to all sales people. Sorry should have killed it there and then).
We will write a patch to fix this.
