Logged in User wise default warehouse in Sales Order Item

Use case : System should set logged in user wise default delivery warehouse in sales order item on each item selection. Important, user should be able to change it ,if required.

is there any smart workaround / solution to this ?

the one that i found was the below one to override the white listed function called on field itemcode of sales order item table.
