I guess if you update via frappe cloud, from upgrade option it will automatically migrate all your old data to newer version of erp. also i did the same and my data is safe as well as migrated successfully to erp14.
I haven’t upgraded to 15 yet.

Yes it will automatically migrate all data to new via frappe cloud.
Hello, Version Upgrade here are the doc for the reference to upgrade the site version.
We recommend upgrading the sites first to v13 then to v14 and then to v15.
