While Creating a production plan from sales order, in sales order the item were selected with uom conversion. but after fetching the Sales order to production plan. the planned qty is showing in qty, and the uom is showing the stock uom of the item. here the conversion is not taking.

The Default UOM is mainly serving Default Reporting purpose includes production UOM as well. The purchasing and selling UOMs can be different provided you have defined conversion factor for those against Default UOM.
While bringing your SO into Production Environment, stock UOM is set by Default which you cannot change meaning item Default UOM = Stock UOM which is going to be processed for Production and conversion will only be working for buying and selling cycles only but not Manufacturing.
