How ideal is erpnext/ frappe for this?
Is it possible to track user activity on website/ customer portals in erpnext? Has anyone done something similar?
How can I estimate the resources (server) required for the portal. Expecting it to have photos, videos, etc. similar to instagram. along with support services.

Regarding videos/photos if you follow the good pratices for SEO, they dont will need a lot of resources!
Also, try to host your videos in youtube (private) and use a share-link to embed into the website, it guive you 2 prós:
1 - Save server resources
2 - capture views for free
