Hani,

You can change Perm Level for the field which needs to be hidden from other users, and let only System Manager have permission for it. Check following link to learn how permission system works in ERPNext.

Seems you are using version 2. You will have to set user level defaults on "company" (if I remember correctly!). Check the user "Profile" for setting defaults.
