Remove right of core doctype "contact" that is granted in "Permission Rules" section?

is it possible to remove rights that are granted in core doctypes (in my case the “contact”) in the “Permission Rules” section?

You could go to the “Role Permission Manager” page and modify the permissions there.
You can then export the “Custom DocPerm” records created via fixtures such that it migrated to other installations as well.
