Restrict users to view their own documents only can we achieve it?

in Role Permissions Manager, select the role of the user and use the checkbox “If Owner” next to the doctype.

Make sure no other roles have been assigned that would grant them read access because it will favor higher permissions.

If you had customers who are also system users but did not create their own products/items?

Usecase you are an OEM manufacturer and a product is only available for one specific customer. This customer will use the item for creating Sales Orders but did not create those initially in ERPNext
