I want the serial and batch numbers to be created based on my custom field value, but in Frappe’s default functionality, they are created based on the quantity (qty) value.

The naming for batch controlled items can set uniformly in stock settings as following;

In case of particular need, each item has field for its batch/serial number to be defined for naming in item doctype;
Knowing the fact item either can be serialized or batch controlled depending upon the nature of item itself.
If not satisfied, go for manual naming of batches / serial numbers by configuring stock settings doctype.
