Unable to change naming series for invoice naming

I am using V14 of ERPNext.

In this tutorial is explained how to change naming series for sales invoices:

There is no Home > Settings > Naming Series and when I search it finds no results.
Altering the form itself gives me this error:
You can’t set ‘Options’ for field Series

Some help here would be greately appriciated

Its now called “Document Naming Settings”. You can search for it

Is it also possible to let the user input an invoice number while in the meantime have the ability to select one from naming series?

It not possible… The invoice numbers are auto generated based on the Naming series.
