U need to enable developer mode and click on customize in the form not change it from doctype list i dont obow why but this is what i did
developer mode already enabed.
bench clear cache
(or reload) and try again. Check that you have permissions to edit, and clone/rename if needed

I have the same problem here, we where able to customize all doctypes except Sales Invoice

As @trentmu suggested, Only the way is Reload.

Go to Sales Invoice, click menu and edit docktype from LINKED DOCUMENTS just delete POS Profile, Problem will be solved
