Update or change the Raised by Email ID on Ticket

Currently, the ticket is created based on the Email sent from the customer. Is there any way we can change or Update the Raised by Email to the Ticket ?

Currently we are using the same, We have appended a issue doctype in our email account. SO when customer send us email the we received customer email in Issue list and we can also change a raised by field value in Issue.
