Why cant we select item with variants in sales orders?

Can someone explain the highlighted statement? I’m trying to understand why variants are not allowed for products that are sold. We have a usecase where variants in sale items makes sense. I guess the same apples in retail industry that has numerous SKUs of a single product which can be treated as variants (size, shape & color).

The variant itself can be sold, but the original item becomes a template, and cannot.

As far as I’ve seen, the reason is that all items sold should be variants (that is to say, they should all have a size, color, etc.)

If you were to select the template, then you would effectively choose the item without a size or color.
